Coke is almost pure carbon. It is produced by heating coal in an anoxic environment, so that the volatiles boil off. The process is essentially the same as that used to produce charcoal from wood.

Coke is partially burnt to produce heat and carbon monoxide as the main reducing agent in a blast furnace for iron/steel production. Uncoked coal can not be used in that specific process, in part because of the high level of impurities and in part because of mechanical strength considerations inside the furnace environment.

Since all coal on Earth is believed to be of biological origin and Mars is unlikely to have had a substantial biosphere for any great length of time, coke would likely be unavailable to Martian colonists.
